Healthy Vegan Retreat Recipes

At a recent retreat, our team of volunteers developed a delicious and nutrient-packed vegan menu for our retreat guests. We received so many appreciative comments that we decided to share the recipes for you to try at home.

Have some fun recreating these delicious healthy treats you had on retreat.

Sweet Potato Brownies

Base:
4 medium roasted sweet potatoes
1 ½ cups ground almonds
1 ½ cups oats
10 Mudjool dates
5 tbsp coconut oil
1 cup cocoa powder
½ cup maple syrup

Process (mash) sweet potato. Add all other ingredients and mix well.
Place in lined slice tin. Bake at 180C for 45 mins.

Topping:
5 tbsp coconut oil
1/3 cup maple syrup
½ cup nut butter
½ cup cocoa powder
Vegan chocolate drops

Melt oil and syrup until boiling. Add other ingredients and melt. Pour over cooled base. Refrigerate. Cut into squares.

Nutritious Bliss Balls


Lime Coconut Balls

2/3 cup dried cranberries
1 cup almond meal
2 tbsp coconut oil
1 tbsp maple syrup
1 tbsp lime rind
1 tbsp lime juice

Process cranberries. Add remaining ingredients and mix well. Roll into balls. Refrigerate.


Matcha Balls

12 Mudjool dates
1 cup pistachios
½ cup desiccated coconut
1 ½ tbsp Matcha
2 tbspn coconut oil
26 frozen raspberries

Soak dates. Process pistachios. Add dates, coconut, Matcha, oil and process or mix well. Mould a ball of mix around each berry. Refrigerate.


Cocoa & Apricot Balls

8 Mudjool Dates
1 Cup mixed Cashew Nuts & Almonds
1/2 Cup Dried Apricots
2 tbsp Goji Berries
2 tbsp Chia Seeds
2 tbsp Cocoa Powder
2 tbsp Filtered Water

Process nuts. Add dates, apricots, goji berries, chia seeds, cocoa power and process. Add water if needed. Mould ball and coat with Desiccated Coconut.


Nut-free Bliss Balls

1 cup Organic Quinoa Flakes
8 Mudjool Dates
1/2 cup Desiccated Coconut
2 tbsp Chia Seeds, Pumpkin Seeds, Sunflower Seeds, Goji Berries
1/2 cup Dried Cranberries
2 tbsp Ground Cinnamon
2 tbsp Hulled Tahini
1 tbsp Maple Syrup, Coconut Oil.

Add all ingredients to food processor. Add water if needed. Mould ball and coat with cocoa powder.
